Ingredients
Serves 4
One large onion, peeled and diced
3 cloves garlic, minced
2 tbsp tomato puree
One carrot, finely chopped
One red pepper, finely chopped
150g mushrooms, sliced
1 tsp chilli powder
1 tsp cumin
1/2 tsp ground cinnamon
1/2 tsp ground coriander
500g beef mince
1 x 400g tin red kidney beans, drained
1 x 400g tin black beans, drained
700g jar tomato passata
One cup beef stock (plus more, as needed)
Splash red wine (optional)
30g dark chocolate
Salt and pepper, to taste
To serve:

Method
Heat oil in a pan. Fry onion for a few minutes, until golden. Add in the garlic, tomato
puree and veg, then fry, stirring often, until softened (just under 10 minutes).
Add in the spices, then stir, then tip in the beef.
Fry until the beef is sealed and lightly coloured, then pour over the passata and beef stock and splash of red wine, if using, then tip in the chocolate.
Stir through the beans, then place a lid on the pan and simmer until thickened and bubbling (around 45 minutes), stirring every now and then and adding more stock as needed.
Season to taste, then serve in bowls with rice. Top with 1 tsp Biotiful meal Booster
